Crockpot Pulled Pork Butt

I found a recipe on Pinterest that I wanted to try to use as a starting point for the crockpot. I love my crockpot and use it all the time. It must have been a working woman/mother that created the first crockpot :) My family favorite is my Chicken and Dumplings made in the Crockpot. Cracker Barrel's can't touch mine, they are so much better (at least that is what my family and friends tell me). But I wanted something new and decided to try and do this. It also lets me make it ahead and freeze it for summer dinners.

1 Boneless Pork Butt
1/2 cup Brown Sugar
1 tbspoon Lawry's Seasoning Salt
1/4 cup orange juice
1/4 cup coke (love the way it fizzes in the crockpot)
1 Vadalia Onion
1 bottle of Sweet Baby Ray's Bar-B-Q sauce

Preheat Crockpot on high while prepping. Chop the onion into wedges and scatter in the bottom of crockpot. Note - I spray my crockpot with PAM before using, saves scrubbing later.
Place the pork butt on top of onions. Pour OJ and then the coke over the butt. Sprinkle with the Lawry's and then the Brown Sugar. Squeeze half the bottle of sauce over the butt and reserve the other half. Cover and cook on low 6-8 hours or until fork tender. Remove from crockpot and let rest for 10 minutes. Take two forks and pull the meat apart placing in a glass bowl. Add the remaining bar-b-q sauce to desired consistency. I got enough meat from my pork butt for two meals for three people. Enjoy!
